Asian Inspired Roasted Pumpkin Soup l mum-bo-jumbo.comMy Dad recently visited me before he left on a well deserved overseas holiday. Unfortunately I am not in a position to go with him so as a consolation prize, he left me a Japanese pumpkin fresh from his garden.

As it is winter time here in Australia, it is the perfect time for pumpkin soup. Wanting to try something a little out of the ordinary, I decided to try an Asian inspired pumpkin soup. I can’t believe how tasty this soup turned out! It is possibly the best batch of pumpkin soup I have made.

Instructions
  1. Cut up pumpkin into small cubes. Remove skin and seeds. Place on greased baking tray.Drizzle with coconut oil. Roast in a moderate oven for half an hour.
  2. Finely dice the onion and gently fry in coconut oil in a heavy based pot until translucent. Add minced ginger, mix thoroughly.

  3. Add roasted pumpkin to the pot and combine with the onion and ginger mixture.
  4. Gently pour in the chicken stock and season to taste.
  5. Simmer the soup mixture for a few minutes before adding the coconut cream. (For a low fat version, use coconut milk).

  6. Continue to simmer the soup until the pumpkin starts to break down (normally around 20 minutes). Use a potato masher to mash up the pumpkin before removing from the heat.
  7. Allow the soup to slightly cool before using an appropriate tool to carefully puree the roasted pumpkin soup.

Soup is suitable for freezing for up to a month.
