Homemade Sweet Coconut Biscuits

Here in Australia, biscuits are what Americans regularly refer to as “cookies”. Either way, this recipe for homemade coconut biscuits is SO SIMPLE! 

Although I used “sweet” in the title of this recipe, these biscuits aren’t too sweet – in fact they have just the right sweetness. I didn’t want anyone from overseas mistaking this recipe for a savoury biscuit.

With inspiration from the long established Country Women’s Association (CWA), I found a recipe in an old book belonging to my husband’s Grandmother.

With only five staple ingredients, this batch of coconut biscuits turned out so well, I just had to share this recipe with you.

Ingredients
Servings: biscuits
Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. Cut butter into small cubes and place in mixing bowl. Add brown sugar and cream together using an electric beater until completely combined.
  3. Add egg into butter and sugar mixture. Stir through until mixed entirely.
  4. Add flour and coconut. Fold through wet mixture until biscuit dough forms a paste type texture.
  5. Roll out the biscuit dough until thin. Make sure the dough is even. Cut biscuits using cookie cutters.
  6. Place biscuits onto lined baking tray. Place in oven for 10 -12 minutes or until a light brown colour.
  7. Remove from oven and allow to cool on baking rack.
